Alastair Kennedy has worked within the food and biotech sectors for over 40 years. He has extensive market development, controlled supply chain development and new product development skills, working within UK and global markets. He also has experience of using co-products from a number of industries and converting them to profitable value-added products. He is currently a retained consultant for Seafood Scotland currently working on the formation of the Scottish Ocean Cluster. This cluster will initially focus on valorising current by-products, from seafood processing using the 100% fish model. He has recently worked on determining the volume and characterisation of seafood processing by-products, available in Scotland, and will be available to discuss further at the conference.
